Spicy Rémoulade


Servings: Makes about 2/3 cup

1/2 cup mayonnaise
3 tablespoons coarse-grained mustard – try 4T*
2 tablespoons drained prepared horseradish
2 tablespoons chopped scallions – added some*
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper – try 3/4t*
1/2 teaspoon fresh lemon juice – added all from a half a large lemon*
Kosher salt
Freshly ground black pepper
Try adding capers*


Whisk first 7 ingredients in a small bowl. Season with salt and pepper. DO AHEAD: Can be made 2 days ahead. Cover and chill.

*  Mary made this first on 8/14/2015 to go with salmon patties and it was good. Made per the recipe other than maybe a little more lemon as it was a big one and more scallions. Great flavor.  Maybe next time add more cayenne and cajun coarse ground mustard. Also capers would be good.
