8/12/2018 — Baby Limas with Ham inspired by the recipe at Camellia Brand. We liked the simple lima bean style that is heavy on the ham. The recipe below is kicked up a lot from the one at Camellia byway of the Creole Seasoning we used although we left out the dash of cayenne and the tiny bit of black pepper as the small amounts are clearly in the blend.
Ingredients:
1-pound Baby Lima Beans
1 large (or 2 medium onions), coarsely chopped
1 ham bone with the muscles still intact around the bone
1 Tbs Kit’s Creole seasoning blend [Next time add 1.5 Tbs or try 1T of 6POGS}
1/4 teaspoon freshly ground black pepper
Dash cayenne pepper
Salt, to taste
Directions:
- In a dutch oven or the large CI bean pot, boil then simmer the ham bone in water (to barely cover the bone) about 2 hours to make a ham broth. Add water when needed to barely cover the bone
- Add the rinsed beans to the broth (with ham chunks and bones) and top with enough water to just cover the beans. Add water when needed. Simmer for about 2 hours.
- Stir in the chopped onions and creole seasoning.
- Cover and simmer for 1-2 hours until tender.
