10/22/2017 – I should not have bought these ribs as there was almost no meat and a lot of “bald spots”; i.e. rib bones showing.
10/22/2017 – Bought frozen beef ribs at HEB yesterday that do not have much meat–all bones are shiners but they were cheap. Thawed, pulled the silver skin then sprinkled on Kosher Salt on both sides; then Jeff’s Texas Rub on the outside.
11:00 – 3:00 PM Smoked them with 2/3 pecan and 1/3 ChefMaster Mixed at 250-270. Pulled and wrapped in foil with some ACV. Put into the oven at 300 until 3:30 and turned it off.
