Cajun Pickled Eggs

Left the eggs in the brew for 3 weeks as forgot about them.  Tried one cold out of the brew and found it very firm with mostly a vinegar taste. For all the spices in the jar little of the flavor was absorbed into the eggs. 

February 5, 2017

After 5 weeks

5  1 doz. hard boiled eggs
1 1/2 teaspoon salt
2 T red pepper flakes  2 whole cayenne peppers
1 2 teaspoons sugar — used turbinado
2 tablespoons whole peppercorns
1/2 cup of water
2 bay leaves
2 1/2 cups vinegar
2 tablespoons Tony Chacheres or your fav. Used Magic Swamp Dust by Cajun Cooking
1/4 teaspoon garlic powder

Mixed all the ingredients (except eggs) and boiled. Let brine cool with lid so it steeped for a couple of hours. then poured over eggs and sealed jar. Refrigerate for at least 2 weeks.

3/12/2017 – Tried two for the first time. It has been 5 weeks since preparing them. Mild flavor with the slight vinegar taste of a pickle. Not hot or spicy at all

Conclusion – After trying three of three eggs at three different times I decided they are not worth the trouble or worry as there was little flavor. If we needed to preserve eggs then this would be ok.
