Corn Spoonbread

This is a great, rich, moist, almost casserole like cornbread.


1 box 15 oz. Fleischman’s Simply Homemade cornbread baking mix. [Original recipe called for standard box of JIFFY Corn Muffin Mix]
1 can cream style corn
1 can whole kernel corn, drained
1/2 stick butter, melted. Original called for a whole stick
1 cup sour cream
3 eggs
½ teaspoon salt
Added to original recipe:
3 green onions
mild jalapenos minced


Baked in a french casserole at 375 for about an hour???

October 12, 2016 – First time – Great, moist and definitely spoon bread as it stayed in form but not dry enough to slice. Jalapeno and onion were surely there flavor wise but were not noticeable. If it was made with the smaller box of Jiffy that has about half the cornmeal as 15 oz. Fleischman’s then it could have only been eaten with a spoon.
