The recipe below is what he made in his video on YouTube here. He did not say it is what he serves at his restaurant. This is quite different than the recipe in his book that we tried here. Maybe add some cumin.
1/2 lb. butter melted in hot pot
1/2 yellow onion chopped
1-1/2 C ketchup
1/2 C ACL
2 oz lightly packed lite-brown sugar
>1t Kosher salt
>1t black pepper
<1t chili powder
<1t garlic powder
Juice of 1/2 lemon
Cook down onion in butter until translucent.
Add everything else.
Stir with a large whisk (apparently said jokingly), simmer down in a very light boil.
