2/20/2019 – This turned out very good and will be a great way to use cabbage.
INGREDIENTS
3 tablespoons bacon fat
1 onion, chopped coarsely
1 small green cabbage, chopped into 1″ squares
1/2-3/4 lb smoked cajun sausage sliced
1 can Rotel tomatoes, undrained
1/2 – 1 teaspoon Kit Whol’s Creole Seasoning
salt, to taste
black pepper, 2-3 heavy shakes from a pizza cheese shaker
Preparation
- Saute the onion in the bacon fat lightly;
- add the sausage and saute until the fat in the sausage begins to render;
- add the cabbage and saute until wilted;
- add the Rotel and creole seasoning;
- check the salt content and correct if needed;
- add the coarse ground black pepper
