Spice Conversion Rules of Thumb

When substituting dried herbs for fresh, use 1/3 the amount called for:

1 Tbsp fresh herb = 1 tsp dried herb

When substituting ground dried herbs for dried leaf herbs, use 1/2 the amount:

1 tsp dried leaf herb = 1/2 tsp ground dried herb

A handful of spice substitutions:

Anise: 1 star anise = 1/2 teaspoon anise or fennel seed
Cinnamon: 3 inches cinnamon stick = 1 teaspoon ground
Cloves: 3 whole cloves = 1/4 teaspoon ground
Garlic: 1 garlic clove = 1/8 teaspoon ground
Turmeric: In most recipes, an equivalent measure of curry powder is acceptable.
Vanilla: 1 inch vanilla bean = 1 teaspoon extract

12 Tbsp = 3/4 cup
10 Tbsp = 5/8 cup
8 Tbsp = 1/2 cup
6 Tbsp = 3/8 cup
4 Tbsp = 1/4 cup
2 Tbsp = 1/8 cup = (1 oz)
