11/05/2017 – Used a whole head of white cabbage from Hong Kong Market. Cored and shredded with the new slicer to have 2,215 gm. Mixed in 31.5 gm Morton’s canning/pickling salt or 1.4%.
Added:
- 22 juniper berries
- 1 T heaping caraway seeds
- 1 T + 1 teaspoon brown mustard seeds
Hammered the mixture with the metal meat mallet and packed it into the jars with the handle of the mallet. There was enough to fill a 1/2 gallon jar full plus a scant 1 qt jar and neither needed brine to cover as it made enough. Installed an airlock and the jars into the guest restroom.
12/1/2017- Forgot to crush the seeds as needed due to my colin pockets. Tasted very good with a hint of the mustard as desired.
