  • Dry the surface well. When a recipe calls for browning or crisping, pat the chicken dry first. Surface moisture encourages steaming rather than deeply golden edges.
  • Give the chicken enough room. Avoid crowding the skillet or pan when the recipe directs you to work in batches. That extra space helps the chicken sear rather than steam.
  • Follow the individual recipe’s doneness guidance. Bone-in and boneless thighs cook at different rates, and size also matters. Use an instant-read thermometer and follow the temperature and resting instructions in the recipe you’re making.
