3/11/2026 – Made this when Mary was in Houston. The Bluerunner Gumbo was the Yaya Mama version, which is a dark roux. It turned out good.
Olive oil to coat the bottom of the old pressure cooker pot.
Red onions as they were about to go bad
Celery that was a bit limp
Garlic added later
10 inches of Cajun sausage
One large can of Bluerunner Yaya Mama Gumbo Base
Procedure:
- Into the old spressure cooker pot put enough Olive Oil to cover the bottom.
- Once hot then added the sausage and seasoned with Kit’s Creole Seasoning.
- Once the sausage released it oils to some extent, I added the onions and celery and seasoned with Kit’s Creole Seasoning.
- Simmered until the celery was softening
- Added the can of Bluerunner and stirred to combine.
- Simmered slowly for about 2 hours while stirring frequently.
