Spicy Shrimp Stir Fry with Garlic & Ginger

1/7/2020 – This was one of Mary’s first stir-fry meals in a long time. She was a bit tense and, in addition to advice from Maggie, had spent time watching videos on that cooking style. The recipe below was inspired by the one here. It turned out great. The veggies were crunchy, the shrimp were crunchy, tender and flavorful, and it had just the right amount of heat for us.

Ingredients

  • 2-1/2 tablespoons oyster sauce
  • 2-1/2 tablespoons soy sauce
    • Note – Added 1/2 tablespoon more of each sauce as we had a lot of vegetables from the gardens tonight.
  • 1 tablespoon sambal oelek
  • 2 tablespoons fresh cilantro from the garden, minced
  • 2 teaspoons cornstarch
  • 1 pound shrimp peeled and deveined
  • 2 tablespoons stir fry oil, divided
  • 3 green onions chopped large (white and green parts)
  • 6 garlic cloves finely minced, divided
  • 4 teaspoons grated fresh ginger, divided
  • red pepper flakes to taste
  • daikon radish from the garden, peeled and cut into 1″ long match sticks
  • bok choy from the garden chopped large
  • Snow peas

Instructions

  1. Combine oyster sauce, soy sauce, and cilantro and set aside.
  2. Marinate shrimp in sambal oelek, diced ginger, diced garlic, and cornstarch. Stir to coat everything with the corn starch.
  3. In a wok over high heat, add half the cooking oil and swirl to coat the bottom of the pan. When the wok is very hot, add the shrimp in a single layer and cook partially until one side is nicely seared, about 1 minute. Flip and sear the other side of each shrimp, about one more minute. They should not be cooked all the way through yet. Remove them to a plate and set aside.
  4. Turn the heat down to medium and let wok cool off a bit to prevent the aromatics from burning.
  5. Add the remaining cooking oil and add green onion, garlic, and ginger and stir fry for a minute until fragrant.
  6. Add all other vegetables to the wok and stir fry until the vegetables are bright in color and crisp-crunchy.
  7. Pour in the sauce mixture and add the shrimp back into the pan. Stir fry for another minute or so until shrimp are cooked through. Serve immediately.
