7/27/2019 – This recipe was inspired by the one here. Mary made it with the last of our fresh corn from the garden and it was great.
The Dressing:
1/4 cup mayonnaise
1/4 cup sour cream
1 lime, zested and juiced
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
1 teaspoon crushed red pepper flakes
1 scant teaspoon chipotle chili powder
1 teaspoon garlic powder
The Salad:
4 cups uncooked fresh sweet corn from our garden
1 cup diced purple onion
1 cup chopped red bell pepper
1/8 cup pickled sliced jalapeno, chopped
1/4 cup fresh chopped fresh cilantro
1/2 cup Cotija, Feta or Romano cheese, crumbled
